Job Description
Roles & Responsibilities
OPERATIONAL
- Section Management: Manage a specific kitchen section (e.g., grill, Hot section, Cold section, pastry, etc.), ensuring all dishes are prepared to the required standards. Ensure that the production, preparation and presentation of food are of the highest quality at all times and that guest orders are always served on time. Ensures that section items are ordered efficiently and stock is available for the operations.
- Food Preparation & Cooking: Prepare and cook dishes according to restaurant recipes and Brand specifications, maintaining consistency in taste, quality, and presentation
- Supervision: Oversee and guide junior chefs, such as Demi Chef de Partie and Commis, providing training and ensuring they adhere to kitchen standards
- Menu Development: Assist the Sous Chef or Head Chef in developing new dishes and improving existing recipes for the section.
- Stock Control & Inventory: Monitor stock levels, ensure proper storage of ingredients, and manage inventory for the section. Alert senior staff to any shortages.
- Quality Control: Ensure all dishes leaving the kitchen are visually appealing, correctly portioned, and meet the restaurant’s quality expectations. Follow the shelf life policy and make sure that the FIFO/FEFO system is in place and followed. Write all his food records in the due diligence book during preparation and cooking. make sure that kitchen tools are available & being used when necessary such as Food probes, Tasting spoons, torch lights etc.
KEY ACCOUNTABILITIES
- Health & Safety: Adhere to food safety and hygiene regulations, maintaining a clean and organized section, and ensuring compliance with GCS / local health standards. Ensures compliance with all health and safety laws, such as food hygiene, fire safety, and accident prevention.
- Work closely with other sections to ensure smooth kitchen operations, especially during peak service times
- Address any issues that arise within the section, including equipment malfunctions or ingredient shortages.
- Perform other duties as and when required by supervisors
PEOPLE MANAGEMENT
- Provide guidance and support to junior chefs such as DCDP and Commis.
- Ensure kitchen staff adhere to proper food handling and safety protocols..
- Provide feedback and support to team members to help them improve their skills.
Desired Candidate Profile
- Minimum 2-3 years of relevant experience in a professional kitchen
- Experience in a 5 & 7 Star hotel / restaurant is a plus
- Bachelor’s degree in Hotel & Restaurant Management / Culinary degree or equivalent experience
TECHNICAL SKILLS
- Strong understanding of culinary techniques and kitchen equipment
- Deep understanding of food costing, sales mix and menu planning
- Ability to supervise and support junior kitchen staff
- Knowledge of health, hygiene and safety standards
- High standards of cleanliness
PEOPLE SKILLS
- Excellent communication skills in Arabic and English
- Strong customer service orientation
- Great organisational and mentoring skills
