About The Job

Based at the Mandarin Oriental Downtown, Dubai within the Greek Restaurant in Dubai, the Sommelier is responsible to support the Bar Manager/ Head Bartender to create the wine menu for all outlets and maintain and manage the wine inventory. The role will provide personalised recommendations and ensure a superior wine experience that complements culinary offerings, crucial in shaping our guests dining experiences. Sommelier reports to the Bar Manager.

As a Sommelier, you will be responsible for the following duties:

  • Provide expert wine recommendations and pairings to enhance the guest dining experience, demonstrating deep wine knowledge and personalised service.
  • Train restaurant and bar staff on wine selections, pairing techniques, and service standards to maintain excellence.
  • Manage wine inventory, including ordering, secure storage, rotation, and accurate POS charging to ensure availability and quality.
  • Ensure compliance with hotel policies, health, safety, and sanitation regulations, maintaining a clean and organised wine cellar.
  • Collaborate with kitchen and service teams, oversee mise en place, and participate in pre-service briefings and closing duties.
  • Support operational needs, including requisitions, stock checks, and updating wine lists and by-the-glass offerings.

As a Sommelier, We Expect From You

  • Degree or diploma in Hospitality, Business Management, or specifically in Wines and Beverages; high school qualification as a minimum.
  • At least 2 years of experience as a Sommelier or Beverage Manager in a 5-star hotel or high-end restaurant; international exposure, especially in Asia, Europe, North America, or the Middle East, is preferred.
  • Deep expertise in wines, including grape varieties, origins, fermentation, and tasting profiles, with the ability to educate and guide guests.
  • Proven experience managing wine inventory, orders, and par levels, with solid understanding of POS systems and service procedures.
  • Excellent customer service and communication skills, with fluency in English; Arabic or other languages are a plus.
  • Highly organised, detail-oriented, and adaptable, with the physical stamina and schedule flexibility required for luxury hospitality environments.
