Job Description
Roles & Responsibilities
Job Role:
As an Oriental Pastry Chef, you will be responsible to take initiative and/or assist the Executive Pastry Chef, and in accordance with established policies, procedures, and service standards, oversees and coordinates all aspects of pastry operations of the company.
Job Responsibilities:
- Support the Executive Pastry Chef in maintaining quality and service standards set by Erth Abu Dhabi Management.
- Supervise oriental pastry staff regarding attendance, punctuality, absenteeism, overtime, off days, and holidays to ensure optimal productivity.
- Monitor grooming, hygiene, and uniform compliance of all pastry staff.
- Ensure correct and safe usage of all pastry equipment.
- Maintain a clean, hygienic, and organized kitchen environment suitable for food production.
- Assist in preparing daily requisitions in line with business volume, banquets, and occupancy.
- Assume responsibilities of the Pastry Chef during their absence.
- Coordinate with the Executive Pastry Chef on menu planning and required production quantities.
- Participate in kitchen and hotel-related training programs.
- Ensure kitchen staff attend and engage in scheduled training sessions.
- Restrict access to the kitchen to authorized personnel only.
- Prevent unauthorized food issuance and promptly report any discrepancies to the Executive Chef or delegate.
- Ensure KPI targets on food cost percentage are achieved and waste is effectively managed throughout the product lifecycle.
- Monitor workflows of direct and indirect reports to ensure productivity and coordination across pastry sections.
- Liaise with the ESH department to ensure food hygiene levels meet or exceed regulatory and customer expectations.
- Ensure full compliance with local legislation and statutory EH&S codes of practice.
- Conduct regular area inspections to ensure all kitchen equipment and workspaces are safe to operate.
- Ensure all staff wear required PPE, are properly trained in safe work practices, and are aware of emergency and evacuation procedures.
Desired Candidate Profile
- Comprehensive understanding of kitchen operations across all sections, with strong technical expertise in pastry preparation and kitchen management along with the certification in Food Safety.
- Bachelor’s Degree or equivalent in Culinary Arts, Hospitality, or related field.
- Minimum 6 years of experience in a 5-star hotel chain with at least 3 years in a supervisory role within the pastry department.
