Job Title
Chief Steward and Hygiene Officer Six Senses The Palm Dubai Dubai, UAE
Key Responsibilities
- Oversee daily operations of the stewarding department to ensure efficiency
- Ensure full compliance with food safety regulations, audits, and hygiene requirements
- Monitor payroll costs through effective scheduling and productivity management
- Inspect and verify incoming materials according to specifications and order records
- Build, train, and maintain a motivated stewarding team
- Record guest complaints, operational issues, and equipment concerns for escalation
- Collaborate effectively with culinary and other departmental managers
- Control departmental costs and support budget efficiency
- Maintain exemplary cleanliness in all work areas and ensure adherence to hygiene standards
- Be present throughout service periods to support smooth operation
- Uphold personal grooming and hygiene standards
- Follow all safety, emergency, and security procedures
- Protect guest and property privacy, handling confidential data responsibly
- Attend required meetings and participate in training programs
- Ensure strict adherence to LQA standards

Desired Candidate Profile
Ideal Profile
Vocational or technical certification in hospitality
Minimum 3 years of experience in stewarding or hygiene roles within luxury hotels
Strong understanding of food safety codes, HACCP practices, and hygiene compliance
Advanced MS Office proficiency
Knowledge of F&B and culinary terminology, equipment, and inventory control
Strong leadership and communication skills
Fluency in English
